My spec is probably identical to that from an exterior point of view, Carbon mudguards, panels, lamp covers front rear aero, and the usual goodies, 350bhp upgrade, sports exhuast, Ohlins, traction control, adjustable boost control, stainless fixings, 3' Harness's with pads, gunmetal chassis, lightened flywheel, stainless brake fittings, high level brake light, upgraded gear linkage bushings, AP 4 pot brakes, quick release steering wheel, towing eyes front and rear (road/track), locking fuel cap,reversing camera, Black colour wheels, IVA,Tax and reg.

If you fit the sports exhaust it will break the decibel limits at most venues so your ability to be able to track it will be extremely limited!!

Got it on mine too - no experience of what it is like without but it is very good with it.

How much is it from Ariel (including VAT )?
Are there any other additions to the options list, the one I have is from when I put my deposit down in Feb 2020?

Yes, that's the one.
I can't remember how much it cost but it was less than £100 from memory.
I think it should be standard tbh.
It's transformed the gear change on track. It used to be rubbery and lacked precision but now it's great.
I'm not aware of any recent additions but I've not looked at a list for ages.

LSD (if not standard by now?) is a must.
Remote Brake Bias (nice to play with on track) and Baffled Sump (peace of mind with oil level on track days) are both worth having imo.
Nothing wrong with being 60+

Just had my gear linkage sorted during my annual service and it was £95 + VAT. Very happy with the shift feel now for sure. I wouldn't rule out the sports exhaust as an additional purchase - it only takes 5-10 minutes to change over and for me it really makes the car sound SO much better on the road. It crackles and burbles and has a much more sporty sound than the standard one. My standard one only gets put on for track days now.
